5 Day Cooking Challenge

I am not a huge fan of cooking, but this week I decided to go on a 5 day cooking challenge! It sounds pretty simple, right? Sunday evening I browsed Pinterest for five new and cool recipes! I try to stick with mostly chicken and a little ground beef, so I looked for recipes that included those two meats!

After a little searching, I found a couple of quesadilla recipes along with a new parmesan chicken recipe and a few others! Next task was to visit the grocery store! We went to my all time favorite grocery store in Raleigh! Whole Foods!!! I love shopping for groceries at Whole Foods! The fruits are always delicious and we are such regulars that the deli and meat counter guys almost know us by name!

So once I had all of the ingredients, it was time to try my first recipe off Pinterest! This is what I chose for day 1! Brian is a huge fan of pineapples! He eats pineapple cake, pineapple donuts and even pineapple on his pizza! I figured why not try these caramelized pineapple quesadillas! I followed the recipe almost step by step for one set of quesadillas! The second set was mine and I removed the pineapples! I, on the other hand, am not a fan of pineapples at all! 🙁

I have to admit, this was a tasty little recipe! Next time I would probably leave out the lime in the salsa! Brian said it almost gave him lockjaw! 🙂
